Enchiladas!!

The other night, Lona and I had yummy enchiladas! I've made them quite a few times before, and they always turn out delicious! The ingredients are super easy to swap out if you need to. Now these are not the lowest in calories, but you could always use turkey or half ground beef/half ground turkey. So get cooking! :)




Ingredients:
1 lb ground beef/ground turkey/shredded beef (I've used leftover pot roast - YUM!)
1 small can tomato sauce
1 can refried beans
1/2-1 diced onion (amount optional)
2 cans red enchilada sauce (can use mild/medium/hot/or a mixture)
2 cups of shredded cheddar cheese
8-10 tortillas
Sour Cream, other toppings (optional)

Directions:
Brown ground beef, drain. Add tomato sauce, refried beans, and diced onion and heat until all combined. Spread a couple of tablespoons down the middle of the tortilla, and 1-2 tablespoons of enchilada sauce, and sprinkle with shredded cheese. Roll tortilla and place in greased cake pan. Continue filling all tortillas. Combine leftover enchilada sauce and leftover meat/bean mixture and heat until combined. Pour meat mixture/enchilada sauce over rolled tortillas and spread to cover tortillas completely. Cover with remaining cheese. Bake for 30 minutes in 350 degree oven. Top with sour cream, etc. as desired. Enjoy!!

New Beginnings

Happy New Year! We have been talking about starting a blog for awhile now, but we just never got around to it. So I figured, a new year is a great time to start. I'm not expecting too much from this blog, just some highlights of our daily lives and something for us to look back on down the road.

Hopefully this blog will chronicle the many adventures and predicaments we get ourselves in to. Lona and I like to have a good time. :) But we would also like to share before and afters around the house, fun DIY projects we've been 'pinning,' and maybe even a yummy recipe or two! Pretty much, this blog has no boundaries - so be prepared!

Anyway, thanks for reading, and hopefully we'll have an update soon. :)
