Ingredients:
1 lb ground beef/ground turkey/shredded beef (I've used leftover pot roast - YUM!)
1 small can tomato sauce
1 can refried beans
1/2-1 diced onion (amount optional)
2 cans red enchilada sauce (can use mild/medium/hot/or a mixture)
2 cups of shredded cheddar cheese
8-10 tortillas
Sour Cream, other toppings (optional)
Directions:
Brown ground beef, drain. Add tomato sauce, refried beans, and diced onion and heat until all combined. Spread a couple of tablespoons down the middle of the tortilla, and 1-2 tablespoons of enchilada sauce, and sprinkle with shredded cheese. Roll tortilla and place in greased cake pan. Continue filling all tortillas. Combine leftover enchilada sauce and leftover meat/bean mixture and heat until combined. Pour meat mixture/enchilada sauce over rolled tortillas and spread to cover tortillas completely. Cover with remaining cheese. Bake for 30 minutes in 350 degree oven. Top with sour cream, etc. as desired. Enjoy!!
